Vaca Vieja is not for the average steak lover—this is an intense beef experience, prized for its deep flavor, aged complexity, and bold, beefy intensity. This cut is usually reserved exclusively for our top chefs and high-end restaurant customers—but we’re releasing a small batch for our online customers to enjoy.
Cut from 8–10-year-old retired Angus breeder cows and dry-aged for 28 days, this rare steak delivers a richness and depth you simply won’t find in younger beef. Revered in Europe—especially Spain—vaca vieja is celebrated for its concentrated flavor and heritage approach to beef.
Each cowboy steak is 2 inches thick, with a frenched rib bone and beautifully developed marbling. The dry-aging process amplifies the savory character, resulting in a flavor best enjoyed with a heavy salt crust, a hard sear, and sliced thin against the grain.
We harvest just 60–100 vaca vieja animals per year, and only a few of these steaks are ever made available outside our restaurant program.
