Loin Chop — Boneless (~ .5 lb; 1 per pack)
Taken from the center of the loin, this section does very little work on the animal, which makes loin chops naturally tender and lean with a clean fat edge. Because they’re cut to a consistent size, these boneless chops cook like a pork steak—perfect for a slow sear or a skillet-to-oven finish.
