Our 100% pasture-raised pork chops come bone-in and full of rich, clean flavor. Whether you sear them in a cast-iron skillet with butter, roasted garlic, and rosemary or grill them hot and fast, these chops turn out beautifully every time.
You can choose between two chop styles, each coming from a different part of the loin:
Loin Chop — Thick Cut (1.25–1.75 lb; 1.5-2 inch thick):
Taken from the center of the loin, this section does very little work on the animal, which makes loin chops naturally tender and lean with a clean fat edge. Because they’re cut to a consistent size, these thicker chops cook like a pork steak—perfect for a slow sear or a skillet-to-oven finish.
Rib Chop — Approximately 16 oz:
Cut from the rib section of the loin, closer to the front of the animal. This area has more natural marbling, giving rib chops a richer flavor and extra juiciness. These rounder, slightly smaller chops are easy to cook quickly and stay beautifully moist.
