Holiday food traditions are near and dear to our heart, and this year we are excited to add a new favorite to our lineup of stellar entree options for your gathering: Boneless Ham Roast.
Stemple Creek Ranch ham tastes better because it comes from happy pigs. Our sustainably raised Duroc, Yorkshire, and Landrace cross hogs live out their lives free range in a large grove of Eucalyptus trees on our ranch in Tomales, California. In addition to their supplemented diet of non-GMO wheat, barley, and peas, they spend their days communally rooting in the soil, rolling in the mud, and expressing natural piggy behavior.
Smoke cured to perfection and ready-to-eat, this ham roast needs only to be reheated in the oven for several hours, then finished at the end of baking with this sumptuous honey-spice glaze (see recipe below). It's a delectable treat, reminiscent of that "other" honey-baked ham, that's guaranteed to have everyone's mouth watering!
Stemple Creek Honey Glazed Ham Roast
(6-8 servings)
Ingredients:
- 6-7 pound Stemple Creek Ranch Ham Roast
- 2 Tbl. melted butter
- 3 Tbl. Stemple Creek Honey
- 2 Tbl. bourbon
- 1 1/2 cups sugar
- 1/2 tsp. onion salt
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. ginger
- 1/4 tsp. ground cloves
- 1/4 tsp. smoked paprika
- Dash of allspice
Step 1: Preheat and Prepare
Preheat oven to 325°F. Place the whole ham on a foil-lined roasting pan. Tent with foil.
Step 2: Bake the Ham
Bake on the center oven rack for approximately 3 hours. Start checking with an instant-read thermometer after 2.5 hours to determine doneness (internal temp. should be around 135°F).
Step 3: Prepare the Glaze
While the ham bakes, blend melted butter, honey, bourbon, and spices in a small bowl. Mix to form a paste and set aside.
Step 4: Score the Ham
When the ham has reached the desired internal temperature, remove it from the oven and increase the temperature to 400°F. Use a knife to lightly score the top of the roast in a shallow diamond pattern.
Step 5: Apply the First Layer of Glaze
Rub 2/3 of the sugar-spice mixture over the top of the ham, pressing into the cuts. Return the ham to the oven for 5 minutes
Step 6: Caramelize the Glaze
Remove the ham and reset the oven to broil. Baste the roast with pan juices, and then apply the remaining 1/3 sugar-spice mixture. Return the ham to the oven under the broiler (watch closely to prevent burning!) to melt and caramelize the top crust.
Step 7: Rest and Serve
Remove from the oven and let the ham rest for 5-10 minutes. Slice and serve with pan juices.
