Homemade Spicy Ground Pork Chorizo (serves 6)

 

Spice up your life with the bold flavor of this homemade Mexican Chorizo Sausage made with our pastured ground pork. It's so easy to make you'll never buy store bought again! Simply combine the ground pork with fresh seasonings and you have a delicious addition to your morning scramble, burritos, tacos,  and more. 

INGREDIENTS

  • pounds Ground Stemple Creek Pork 
  • 2 tablespoons smoked paprika
  • 1 tablespoon cayenne pepper
  • 1 tablespoon ancho chili powder
  • 1 tablespoon guajillo chili powder
  • 1 tablespoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano
  • 1 teaspoon ground coriander
  • 2 tablespoon red wine vinegar
  • Salt and pepper to taste

INSTRUCTIONS

  1. Place the raw ground pork in a large mixing bowl.
  2. Add the seasonings and vinegar. Mix all the ingredients together by hand until incorporated.
  3. To cook, place (1) tablespoon avocado or vegetable oil in a large frying pan on medium heat. Add the seasoned pork and cook thoroughly (5-8 minutes) breaking the pork apart with a spoon. Use immediately or refrigerate leftover Chorizo and use throughout the week.
