Not So Secret Spicy Sauce for Grass-Fed Burgers

This last weekend we served sliders (mini hamburgers) at a cocktail party as a passed appetizer.   At too-late o’clock the night before (I am way too much of a night owl) I was trying to think of a fun sauce to jazz them up a bit . . . and I came up with this little ditty.  It was a hit.  No need for exact measurements, just throw these ingredients in a bowl and mix to taste: ketchup, mayo, cayanne pepper, and the star of the show – chopped up Alexander Valley Gourmet Hot and Spicy Pickes along with the onions and other bits of goodness in the pickle jar.   And by the way, these pickles are amazing on sandwiches or just for a little snack all by themselves. 

As for the sliders, we got ten perfect sized patties from each pound of ground beef and then used little dinner rolls as the buns.  Such a fun idea for a party or just an alternative to regular sized burgers for dinner at home.

I (Lisa) love reading food blogs. Many of the recipes I can only dream of making, not because I don’t want to or don’t think I’m capable (although I am no Martha), but because time is of the essence around Casa de Poncia. Between our jobs, the Ranch, the dogs, and of course our daughter Avery Jane, I don’t get that much time to experiment in the kitchen.

Some of my favorite food blogs are:

The Pioneer Women Cooks: Her Most Favorite Salad has quickly become one of my most favorite salads. As I often do, I made it a little different each time. The dressing is amazing and I throw in whatever veggies are floating around my kitchen.

Smitten Kitchen: This website has been equated to food porn, and I really can’t disagree. The photography is amazing and the recipes don’t disappoint. We recently hosted a brunch and followed much of this post called how to host brunch (and still sleept in). It was a hit . . . both and sleeping in and the food.

The Bitten Word: This is a fun blog, although I haven’t tried any of the recipes yet. A friend alerted us to this Skirt Steak with Paprika Butter post and I can assure you this will be on our table sooner than later. We’ll let you know how it goes!

We’ve had many pot roasts that are just not that exciting.  Pretty ho hum.  But Barefoot Contessa has a pot raost recipe that she calls Company Pot Roast that makes pot roast worth eating.  It truly is a meal that you would be proud to serve dinner guests.  Try it and let us know what you think.

Grilled Leg of Lamb

This is a fabulous way to prepare leg of lamb.

Butterfly the leg of lamb and trim the excess fat.  Place the meat in a big ziplock bag.  Add the following ingredients into the bag:

4 tablespoons of olive oil

1 teaspoon of black pepper

1 teaspoon of oregano

2-3 sprigs of rosemary

3-5 cloves of garlic (diced)

1/2 cup of lemon juice

Let the mixture marinate for at least a few hours, and preferably overnight.   Take the meat out of the bag and wipe the excess marinade off of it.  Place the meat on a preheated grill for about 4 – 5 minutes per side for a thinner cut and 6-8 minutes per side for a thicker cut.  Take the meat off the grill and add a sprinkle of garlic salt.  Serve medium rare.

Our Favorite Way To Eat Grass-Fed Steak: Keep It Simple!

Our favorite way to eat grass-fed steaks, whether they are beef or lamb, is to throw them on the BBQ and keep it simple.  The most important thing is to not overcook the meat. 

We suggest using 1 to 1 1/4 inch steaks.   Take 1 tablespoon of olive oil and rub or brush it on the steaks.   Season it to your liking with garlic powder, salt, and black pepper.   Place the steaks on a grill preheated to 450  degrees.  Close the lid on the grill and allow the steaks to cook for 5 minutes.  Flip the steaks, close the lid again, and cook for another 4 minutes.  Voila!  That’s it.  We promised it is simple.  Serve medium rare, preferably with fresh grilled veggies and a nice glass of wine or a cold beer.
